Matcha Layered Basque Burnt Cheesecake recipe :

 

Basque Burnt Cheesecake

 

Ingredients

900g cream cheese, room temperature, in pieces

300g sugar, to taste

6 large eggs

450g heavy whipping cream

57g all purpose flour

1 tsp vanilla extract (optional)

1/2 tsp salt

 

 

Preparation

  1. Preheat oven to 200°c. Lightly grease a springform pan (9 in.) and line the sides with parchment, ensuring paper extends 4 inches beyond top of pan. Place prepared pan onto a baking sheet and set aside.
  2. Place cream cheese and sugar into mixing bowl and mix 30 sec/speed 5. Scrape down sides of mixing bowl with spatula and mix 30 sec/speed 5.5 until smooth.
  3. Add eggs, whipping cream, flour, vanilla and salt and mix 30 sec/speed 5. Scrape down sides of mixing bowl with spatula and mix a further 1 min 30 sec/speed 5 until smooth.
  4. Pour batter into prepared pan and place pan on baking sheet into oven. Bake 60 minutes (200°c). Allow to cool in pan or place in fridge.

 

 

No Bake Matcha Cheesecake

 

Ingredients

250g water

400g cream cheese

200g cream

40g sugar

1 sheet of gelatin

5g matcha powder, sifted, adjust to taste

 

Preparation

  1. Place water in mixing bowl and heat 5 min/100°C/speed 1.
  2. Add gelatin, cream cheese, cream and sugar and mix 20 sec/speed 5.
  3. Pour mixture on top of basque burnt cheesecake and refrigerate. Serve when chilled
